If mail needs 1-5 min to pass your server you should grep for the delayed mail
in your logfile and see what happens. If mail from somewhere to your server
travel a long time until it arrives, you can look in the headers where it spent
the time, but nothing you can do on your side (beside deactivate greylisting
:-).
