What happens to email that Postfix can't deliver?

We just had this situation where one employee setup an SMTP program on
his test computer but left it open to everyone so in one night we got
somebody who used that box to send a lot of spam, the SMTP was on from
around 4PM and the next morning we got a call from our provider saying
we were sending spam, so to make a long story short, this week's maillog
file is already 10 time bigger than the previous ones, I was wondering
what happens to the mail that can't be delivered? Like the recipient's
and the sender's address can't be reach will postfix keep these emails
forever or something? Also how can I know how much mail there's in the
queues?
