Hey Paul,
I'm a bit tired so I'll just focus on #2-4. I had asked this question
(or one similar) previously. Ralf had mentioned adding:
smtpd_recipient_restrictions = check_client_access btree:/path/to/drac.db
or to add btree:/path/to/drac.db to mynetworks. I chose that latter since I always seem to break my smtp whenever I start playing with the smtpd_recipient_restrictions. You will also need to apply the drac patch in the cyrus contrib directory (I hope it applies better than the one for 2.0.16, I had to work to get that to apply). The instructions are actually in the patch itself. You have to then add the following to your imapd.conf file:
dracinterval: 15
drachost: localhost
the dracinterval has to be non-zero, other wise drac is disabled. It took me a couple of hours to realize what I was doing stupid. This will resolve 2 -4 of your issues since by default postfix shouldn't relay for you (#3). By getting drac to work you will resolve #2.
I think you'll find that #1 can be set up via smtp_recipient_restrictions.
