Both Cyrus and Courier provide POP and IMAP servers. Cyrus has its own
user authentication system, Courier afaik provides various methods
including hooking into system authentication.

PAM is the best way of doing this, as much as it sounds like you're
going to hate hearing that ;)
You can also get postfix to hook into LDAP (rtfm) so you can do neat
stuff like toss mail for unknown users straight from smtpd & do mappings
between email address and mailbox. This is independent of
authentication to your POP/IMAP server and does not involve PAM at all.
Not sure how well NSS can be used with postfix and third-party pop/imap
servers to deal with LDAP users.
