Kevin,

In the configure options under Setup, I checked the box enable-incoming-folders. Then under Setup->Collection List I added a collection and it prompted me for Nickname, Server, Path and View. I left path and view blank, filled in the server and chose a nickname.

When I selected my INBOX it was empty. I could however create and remove folders. It at least seemed pretty clear in the seperation between the local mail and the IMAP INBOX but since I have never setup pine before I can't be totally sure.

By default, pine retrieves mail from your mbox folder. Your mail is not
being delivered there. It's being delivered to your Cyrus folder. Did you
configure pine to use IMAP?
